A different kind of carbonara

This method for carbonara appeared in a W2 Kitchen video on the history of Carbonara and I think it's my favorite!

Fry up the guanciale (or ham in my case, as that's all I had) in butter, toss the cooked pasta in the remaining fat, then in a bowl mix the pasta with an egg yolk. Top it all with cheese (parm in my case because I don't like the sheepiness of pecorino) and mix it all together.

It's pretty dry but I like that about it. Might not be for everyone but give it a try!
